From the Sierra de Gata in Cáceres, Extremadura, comes this jewel in the form of a cheese. Made and matured from 100% goat milk, has small inner cracks and cavities of a pale yellow colour, hiding a strong, intense flavour.

Slightly spicy in taste, adequately salty, with a fatty texture, compact and soft. The crust is covered in paprika, which adds to the slightly spicy tone and gives it a orange-ish brown crust colour, rough and oily.

This is a connoisseurs cheese, to be enjoyed with fruity red wines.
