Señorio de Montanera is an Extremadura farmer-founded company with dehesas in Extremadura, Andalusia and Portuguese Alentejo. A company that raises its pure Iberian livestock exclusively on acorns, and makes its products mostly by hand, with a process passed on from one generation to the next.

The fat is yellowish with naturally ocurring moss on the surface, the cut is an intense red, with numerous intramuscular fat streaks almost transparent. Its aroma is intense, with a juicy, long lasting taste, slightly salty but also sweet hints. Aged between 30 and 40 months, this is a rare ham, beware of imitations.
