CURED SIRLOIN RUBIELOS
The cabeza de lomo is a cured meat made with sirloins from D.O. Teruel pork meat, pepper, paprika and other spices. All of it stuffed into a natural gut. Because of the high amount of fat, its texture is juicier than the Lomo's meat.
Our sirloin has a special red colour, it has consistent and smooth texture. The cut is homogeneous with a continuous muscular mass and a delicate taste slightly salted.
