The Guijuelo Designation of Origin Iberian Bellota shoulder shares most of the same characteristics as ham, but with a more penetrating flavor, great aromatic intensity, and a subtle combination of lean veins and numerous infiltrations of very tasty fat from its free-range rearing and feeding on acorns.

CHARACTERISTICS

 

A shoulder of intense aroma, with a subtle combination of lean veins and numerous infiltrations of very tasty fat, almost entirely from acorns, giving it properties similar to olive oil, as well as a great flavor and smoothness. This cut is obtained from the front leg of pigs fed on acorns and natural pastures, with a minimum of 50% Iberian breed.

 

ELABORATION

 

The Iberian acorn-fed shoulder is made from pigs with a minimum of 50% Iberian breed (100% Iberian mother and Duroc father), raised free-range and fed with acorns and natural pastures. The curing time ranges from 28 to 36 months depending on the size of the piece. These processes are certified by the green label awarded by the regulatory council.

CONSERVATION

 

Vacuum-packed Iberian acorn-fed shoulder ham can be stored in the refrigerator for up to 3 months in perfect condition. It's recommended to open it 10 minutes before serving to fully enjoy its benefits.
